T-minus 13 hours until I start my chili.

I've got the 3 meats rubbed with seasonings already. Need to fire roast the peppers and tomatoes still, then cut them up with the 2 kinds of onion and get them in the pot to start sweating with the minced garlic, bacon, and corn.

Then get a good sear on the meats before adding them in, tossing in some pinto beans, kidney beans, and finally my other seasonings, before it cooks low and slow for about 20 hours.....
